Shalom u'Vrachah!
In response to your letter from the 18th of Kislev, in which you write about the health condition of the children, may they live, and conclude with a question regarding how to act concerning a food item that is not mehudar (of the highest standard), reasoning that this food could increase the children's appetite.
In general, hiddur (enhancement) in foods—as explained in several places—matters not only for fulfilling the mitzvah properly. Since every food later becomes blood and flesh of the body, which connects with the soul, the kashrus and refinement of foods influence the character and good traits of those who consume them. Therefore, every addition in hiddur, refinement, and purity of food should also be considered as an enhancement in shaping and refining one's character and traits.
If this is so for adults, it is even more so for children whose character is still being formed. Therefore, it is very important what direction they are led in regarding this matter.
According to what was said above, my opinion is clear: since this is not a case where their entire health depends on it (G‑d forbid), but rather it is only about increasing taste and strength, one should not lessen the standards of hiddur in foods. Surely other ideas and ways can be found to stimulate appetite and make the children healthier—not at the expense of kashrus and hiddur...
With blessing for good news,
In the name of the Lubavitcher Rebbe shlit"a,
Secretary
Summary
The Rebbe teaches that maintaining high standards of kashrus and refinement in food directly influences children's developing character. Even when seeking ways to improve their health or appetite, one should never compromise on these values.
