Shalom u'Vrachah!
In response to your letter regarding your family's situation, especially concerning kashrus: It is well known that first and foremost, one must approach with peace—that is, to proceed pleasantly and explain that Torah and mitzvos are for a person's benefit, both for the soul and the body, in this world and in the World to Come. Especially regarding kosher food and drink—as our master the Alter Rebbe writes in Tanya Kedosha—it becomes one's blood and flesh. Non-kosher foods cannot be tolerated by a Jewish body. Even though sometimes it takes time until negative results are seen G‑d forbid, it is understood that normal people with sound minds would not do anything to seriously harm their health even if the damage would only become apparent after several years. When you add that this is not meant to frighten but comes from Ahavas Yisrael in general and love for a relative or child in particular—one must protect loved ones from any harm G‑d forbid—then words that come from the heart enter the heart.
May it be Hashem's will that this be accomplished easily and promptly.
Regarding his visa application: It is surprising that you write it should take a long time since the request comes from a well-known educational institution. My strong hope is that if efforts are made as you describe on behalf of the institution, Hashem will grant success.
As for setting their wedding date for 13th or 14th Kislev—the month of redemption—may it be Hashem's will that it be at an auspicious and successful time. You may write on the invitation "14 Kislev," but use "Or le-14" (the eve of 14) rather than "night of," as our Sages phrase it in Mishnah language.
Enclosed is an excerpt from the talk of Shabbos Mevarchim 8 Elul 5711; its content applies every year and throughout the year, and surely it will be used appropriately.
With blessings for a good inscription and sealing.
Summary
The Rebbe teaches that non-kosher food harms both body and soul—even if effects are delayed—and urges gentle explanation rooted in love when guiding others toward kashrus observance.
