Regarding what you wrote about the mentions of Rashbi in Shas: it has already been noted that he is not mentioned at all in Maseches Challah regarding measures of reeds. The detailed count is found in Sefer Toldos Tannaim v'Amoraim by Rabbi Heiman. It was printed in the booklet "Tzaddik LaMelech" part B, page 162.
On mentions of Rashbi in Shas: see Likkutei Torah Acharei (28a): "In every chapter among the chapters of the tractates in Shas, R' Shimon is mentioned." Also see the note of our master and teacher shlita in the additions there (19a). See also Likkutei Sichos vol. 12 p. 194.
