ידוע אשר רבנו הזקן יסד הנוסח חב"ד שיהי' שוה לכל נפש וכמבואר בשער הכולל להרב א.ד. לאוואוט, ומפורסם והובא בו רק הענינים והתפלות ששוים לכל. משא"כ אלו ששייכים למקובלים ויחידי סגולה.
מן הסתם יש לו קביעות לימוד בפנימיות התורה שבדורנו נתגלתה בתורת החסידות, ובהוספה ביום הש"ק אשר קדש הוא לה'.
בשאלת הכשרות שכותבה - יפנה לרב מורה הוראה בסביבתו.

In response to your question about why certain prayers found in some books are not mentioned in the Chabad Siddur: It is known that our master, the Alter Rebbe, established the Chabad Nusach so it would be suitable for everyone, as explained in Shaar HaKolel by Rabbi A.D. Lavut. It is well known and brought there that only matters and prayers relevant to all are included. This is not the case for those connected to mystics or select individuals.
Presumably, you have a regular study of the inner dimension of Torah which in our generation has been revealed in the teachings of Chassidus, and you should increase this especially on Shabbos, which is holy to Hashem.
Regarding your question about kashrus—please consult a local rabbinic authority in your area.
